Grilled Chicken Tortellini Caprese Salad

Caprese anything is always a favorite of mine! This caprese chicken salad recipe is very easy and oh so delicious! It is put together quickly and will for sure be a crowd pleaser!

Ingredients
  

For the grilled chicken

  • 1.5 pounds chicken breast cut into cutlets, boneless, skinless
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 2-3 cloves garlic minced
  • ¼ teaspoon salt more or less to taste
  • ¼ teaspoon black pepper more or less to taste

For the balsamic vinaigrette

  • 3 tablespoons extra-virgin olive oil mild flavored, or avocado oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1-2 cloves garlic minced
  • 2 tablespoons finely chopped shallot
  • pinch salt
  • pinch black pepper

For the salad

  • 20 ounces cheese tortellini about 2 packs
  • 1 pint cherry tomatoes chopped in half or quarters
  • 1 avocado chopped
  • 1-2 cups arugula
  • 6-7 large fresh basil leaves chopped or sliced in chiffonade
  • salt to taste
  • black pepper to taste

Instructions
 

  • marinate chicken 30 minutes. cook tortellini. put dressing together. Grill chicken 5-6 minutes or each side.
