Start by shredding the zucchini with a cheese grater after chopping off both ends. Place it in a bowl and sprinkle a little salt, stir, let it sit for about 10 minutes.
Put together the yogurt sauce by whisking together the Greek yogurt, minced garlic, lemon juice, olive oil, Dijon mustard, garlic and onion powder, chives, salt and pepper. Set aside in the fridge.
In batches place a large handful of shredded zucchini in a cheesecloth or kitchen towel and squeeze as much liquid as you can.
Place the squeezed zucchini in a separate bowl and repeat until all the zucchini is done.
Preheat the air fryer to 375° Fahrenheit.
Stir together the breadcrumbs, flour, baking powder, garlic and onion powders, salt and pepper until well combined.
Add the zucchini, green onions, cheddar, mozzarella, beaten eggs to the dry ingredients and stir until well combined.
Make patties with the mixture that are just a little be less than a ¼ cup. Roll them in your hands then flatten them a bit and place them on a flat surface.
Working in batches, spray the air fryer generously with spray cooking oil, then using a flat spatula place fritters in the air fryer on a single layer. Spray the top of the fritters (be gentle when adding to the basket, the fritters will be soft).
Cook the fritters for 8-10 minutes, then gently flip with the spatula, spray a little cooking oil on top if needed and continue cooking for 5-7 minutes or until golden with crispy edges. Repeat until all the fritters are cooked.
Place the fritters on a plate or metal rack to cool for a few minutes before serving with the yogurt sauce or sides of choice. Enjoy!
