- Baking powder: you only need a little bit but it'll help the fritters get crispy.
- Spices: onion and garlic powder, salt and pepper. If you want to use any other spices or herbs you love, go for it.
- Spray cooking oil or oil: spraying the preheated air fryer generously with oil is crucial for this recipe or the fritters could stick to the air fryer basket.
For the lemon garlic yogurt dip:
- Greek yogurt: I use non-fat, feel free to use reduced-fat or full fat to your taste. You can also replace it with sour cream.

How to make these air fryer zucchini fritters
- You'll need a cheese grater, cheesecloth or kitchen towel, a ¼ cup, and of course an air fryer.
Shred the zucchini. Place it in a bowl with a little salt and let it sit for 10 minutes.
In batches, place some zucchini in a cheesecloth.
Then squeeze as much excess water as you can, place the squeezed zucchini in a bowl.
Put together the garlic lemon yogurt dip.
Stir together the dry ingredients.
Add the zucchini, green onions, cheese and beaten eggs and stir until well incorporated.
Make patties a little smaller than than a ¼ cup.
Preheat the air fryer to 375° F. Generously spray with oil once hot and place the fritters on a single layer.

- 2 cups shredded zucchini about 2-3 medium zucchini
- 2 green onions chopped
- ½ cup shredded cheddar
- ½ cup shredded mozzarella
- 2 eggs beaten
- ½ cup panko breadcrumbs
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt more or less to taste
- ¼ teaspoon black pepper more or less to taste
- spray cooking oil
For the Lemon Garlic Yogurt Dip
- ⅔ cup non-fat Greek yogurt or low-fat
- 1 clove garlic minced
- 1 tablespoon fresh lemon juice
- 1 ½ teaspoon extra-virgin olive oil
- 1 ½ teaspoon Dijon mustard
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- 1 tablespoon fresh chopped chives
- ¼ teaspoon salt
- 1 pinch black pepper
Instructions
- Start by shredding the zucchini with a cheese grater after chopping off both ends. Place it in a bowl and sprinkle a little salt, stir, let it sit for about 10 minutes.
- Put together the yogurt sauce by whisking together the Greek yogurt, minced garlic, lemon juice, olive oil, Dijon mustard, garlic and onion powder, chives, salt and pepper. Set aside in the fridge.
- In batches place a large handful of shredded zucchini in a cheesecloth or kitchen towel and squeeze as much liquid as you can.
- Place the squeezed zucchini in a separate bowl and repeat until all the zucchini is done.
- Preheat the air fryer to 375° Fahrenheit.
- Stir together the breadcrumbs, flour, baking powder, garlic and onion powders, salt and pepper until well combined.
- Add the zucchini, green onions, cheddar, mozzarella, beaten eggs to the dry ingredients and stir until well combined.
- Make patties with the mixture that are just a little be less than a ¼ cup. Roll them in your hands then flatten them a bit and place them on a flat surface.
- Working in batches, spray the air fryer generously with spray cooking oil, then using a flat spatula place fritters in the air fryer on a single layer. Spray the top of the fritters (be gentle when adding to the basket, the fritters will be soft).
- Cook the fritters for 8-10 minutes, then gently flip with the spatula, spray a little cooking oil on top if needed and continue cooking for 5-7 minutes or until golden with crispy edges. Repeat until all the fritters are cooked.
- Place the fritters on a plate or metal rack to cool for a few minutes before serving with the yogurt sauce or sides of choice. Enjoy!
