Air Fryer Zucchini Fritters

Tender on the inside with delicious crispy edges, these air fryer zucchini fritters are a must-try! A mixture of shredded zucchini, breadcrumbs, eggs, two types of cheese, and served with an easy lemon garlic yogurt dip.

Ingredients

Shred the zucchini with a cheese grater.

In batches place a large handful of shredded zucchini in a cheesecloth or kitchen towel and squeeze as much liquid as you can.

Put together the yogurt sauce. Set aside in the fridge.

Stir together the breadcrumbs, flour, baking powder, garlic and onion powders, salt and pepper until well combined.

Add the zucchini, green onions, cheddar, mozzarella, beaten eggs to the dry ingredients and stir until well combined.

Make patties with the mixture that are just a little be less than a ¼ cup. Roll them in your hands then flatten them a bit and place them on a flat surface.

Spray the air fryer generously with spray cooking oil. Cook the fritters for 8-10 minutes, then gently flip with the spatula, continue cooking for 5-7 minutes or until golden with crispy edges
