Deliciously tender and creamy on the inside, these air fryer carrots and potatoes are seasoned with Italian herbs, smoked paprika, onion and garlic powders.
Chop the potatoes and carrots into bite size (carrots should be cut a little smaller than the potatoes).
Mix all the spices together.
Add the carrots and potatoes to a large bowl, toss them in oil until all coated.
Sprinkled all the spices and toss until coated.
Spray the hot air fryer with spray cooking oil, then add the seasoned carrots and potatoes. Cook for 25-28 minutes, shaking the basket every 5 minutes, spray with cooking oil halfway.
Once ready, remove the potatoes and carrots, adjust salt and pepper, add fresh herbs like parsley, and serve as you wish. Enjoy!
Notes
Chop the carrots a little smaller than the potatoes.
If you double the recipe, depending on the size of your air fryer, I would recommend cooking the carrots and potatoes in batches.
Cooking time will vary by a few minutes depending on your air fryer as each model is unique, as well as the size of the potato cubes.
