Air Fryer Carrots and Potatoes

Deliciously tender and creamy on the inside, these air fryer carrots and potatoes are seasoned with Italian herbs, smoked paprika, onion and garlic powders.

  • Preheat the air fryer at 400° Fahrenheit.
  • Chop the potatoes and carrots into bite size (carrots should be cut a little smaller than the potatoes).

  • Mix all the spices together.

  • Add the carrots and potatoes to a large bowl, toss them in oil until all coated.

  • Sprinkled all the spices and toss until coated.

  • Spray the hot air fryer with spray cooking oil, then add the seasoned carrots and potatoes. Cook for 25-28 minutes, shaking the basket every 5 minutes, spray with cooking oil halfway.

  • Once ready, remove the potatoes and carrots, adjust salt and pepper, add fresh herbs like parsley, and serve as you wish. Enjoy!

Notes

  • Chop the carrots a little smaller than the potatoes. 
  • If you double the recipe, depending on the size of your air fryer, I would recommend cooking the carrots and potatoes in batches
  • Cooking time will vary by a few minutes depending on your air fryer as each model is unique, as well as the size of the potato cubes.
