    Air Fryer Carrots and Potatoes

    Tender with crispy edges, these tasty air fryer carrots and potatoes are an easy, nutritious and delicious side dish to get on the dinner table for the whole family. Seasoned with Italian seasoning and smoked paprika, they'll become a staple you'll want to make over and over again.

    • Carrots and potatoes are both rich in nutrients, and they go incredibly well together. Deliciously tender and creamy on the inside, they're seasoned with Italian herbs, smoked paprika, onion and garlic powders. I cook potatoes a ton in the air fryer as they always come out so yummy like these potatoes and onions, garlic parmesan potatoes, steak fries and diced potatoes.
    • This is a budget-friendly side dish, quick to prepare and both adults and kids will enjoy it. And bonus, it's easy clean-up.
    • This recipe is easy to customize to your own taste. You can use different spices, different kind of potatoes, finish with fresh herbs, some fresh parmesan or even a little drizzle of balsamic glaze. Dip the veggies in a side of Dijon aioli or sun-dried tomato aioli.

    Key Ingredients And Variations

    • Carrots: peeled, and sliced or chopped in 1-inch pieces, the carrots take a little longer to cook, so they should be cut a little smaller than the potatoes.
    • Potatoes: some varieties of potatoes will crisp up more than other, like russet, Yukon gold or baby potatoes. I prefer to peel my potatoes, but if you enjoy the skin, it works too, just make sure to scrub them well before chopping. They'll cook a little faster than the carrots so chop them a little thicker.
    • Oil:  avocado oil or olive oil are my choices as they're healthier fats, but any neutral oil would work. Use a cooking oil spray too when shaking up the air fryer basket to help get those satisfying crispy edges.
    • Seasoning: dried Italian herbs, garlic powder, onion powder, smoked paprika, salt and pepper. Simple but very efficient. Switch them up to taste.

    How To Make air fryer carrots and potatoes

    • Preheat the air fryer to 400° Fahrenheit.

    Peel and chop the carrots and potatoes (carrots a little smaller)

    Combine the spices.

    Coat the potatoes and carrots with oil.

    Tips

    • While most people will tell you to cut the carrots and potatoes uniformly, I find that the potatoes always cook faster which is why I recommend chopping the carrots a little smaller. But this could depend on your air fryer too.
    • Shake the basket often. And use spray cooking oil once in a while.
    • Don't overcrowd the air fryer. If the air fryer is too full, everything will steam and not get crispy at all.
    • These air fryer carrots and potatoes are best eaten right away after cooking.

    How can I tell that the vegetables are cooked?

    Poke both a carrot and a potato with the tines of a fork, if they feel tender they're ready.

    Do I have to peel the carrots and potatoes?

    No you don't. It's a personal preference, but if you keep the skin, make sure to scrubs the veggies well as they both grow in soil.

    Ingredients
      

    • 1 pound potatoes peeled, chopped, about 2-3 potatoes
    • 1 pound carrots peeled, chopped, about 3-5 carrots
    • 1 tablespoon oil or more if needed
    • ½ teaspoon Italian seasoning
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon smoked paprika
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions
     

    • Preheat the air fryer at 400° Fahrenheit.
    • Chop the potatoes and carrots into bite size (carrots should be cut a little smaller than the potatoes).

    • Spray the hot air fryer with spray cooking oil, then add the seasoned carrots and potatoes. Cook for 25-28 minutes, shaking the basket every 5 minutes, spray with cooking oil halfway.

    Notes

    • Chop the carrots a little smaller than the potatoes. 
    • If you double the recipe, depending on the size of your air fryer, I would recommend cooking the carrots and potatoes in batches. 
    • Cooking time will vary by a few minutes depending on your air fryer as each model is unique, as well as the size of the potato cubes.
