Cottage Cheese Chocolate Mousse

Rich, creamy and so satisfying, this cottage cheese chocolate mousse is a must-try if you're looking for a better for you dessert! With about 15 grams of protein per serving, this sweet treat is healthy without compromising its deliciousness!

Ingredients

  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract or vanilla paste
  • 1 tablespoon unsweetened cocoa powder or more to taste
  • 1 tablespoon monk fruit or sweetener of choice like honey, maple syrup. Or more to taste

Instructions

  • Add all ingredients to a blender and blitz for 15-20 seconds. Scrape the sides down with a spatula and pulse a couple more times. Don't over blend!

  • Gently remove the cottage cheese mousse from the blender, refrigerate covered if not using right away. Add toppings of choice like whipped cream, yogurt, chocolate chips, shaved chocolate, nuts, nut butter, sprinkles, granola or fruit, serve and enjoy!

Notes

  • This recipe makes 2 servings. 
  • Cottage cheese: Low-fat or full-fat.
  • Don't over blend the mousse or it'll turn watery.
  • Monk fruit: you can replace with sweetener of choice such as honey, maple syrup, sugar, but you'll need more or less to achieve your desired sweetness.
  • Leftovers can be kept covered and refrigerated for up to 4 days.
