Key Ingredients and Variations
- Cottage cheese: you can use low-fat like 2% or 4% or full fat if you prefer. Non-fat will work too, but it might not come out as creamy.
- Unsweetened cocoa powder: don't add too much at first, cause some unsweetened cocoa powders can be strong. And because there's no sugar in it, too much can make the cottage cheese mousse a little bitter. Ultimately it's up to your taste. For me 1 tablespoon is perfect, 2 tablespoons is too much. You can use sweetened cocoa if you prefer, if you do, skip or reduce the monk fruit.
- Vanilla extract: it gives some flavor, you can use vanilla paste too. I usually like to put as much vanilla as my heart desires when making sweets, but don't add too much to this one, cause the liquid can thin out the mousse and affect its texture.
- Monk fruit: my personal favorite sugar substitute, but you can easily replace it with honey, maple syrup, sugar or any sweetener of your choice. Monk fruit is pretty sweet, you need to adjust the sweetener to your taste.

How to make Cottage cheese chocolate mousse
- You'll need a blender or food processor for this recipe.

Add all ingredients to a blender and blitz for 15-20 seconds. Scrape the sides down and pulse a few more times. Don't over blend!

Gently remove the cottage cheese mousse from the blender, refrigerate covered if not using right away. Serve and enjoy!

Tips & topping ideas
- Don't over blend the mousse. If you do, the mousse will get thin and feel more like a smoothie. Still delicious! It'll take 25 to 30 seconds to get the mousse consistency.
- If you over blend it (like I did before), my favorite trick is to freeze it for my Ninja Creami to make homemade ice cream. Or you can fold it in a little whipped cream or yogurt.
- It's tempting to add more chocolate, but don't add too much if you use dark and/or unsweetened as it can be strong. Adjust to taste. Same with the sweetener.
- Toppings ideas: whipped cream, yogurt, shaved chocolate, mini chocolate chips, crushed Oreos, nuts, nut butter, sprinkles, granola, fruit like strawberries and raspberries.
