Toast Base
- 1 slice sourdough or bread of choice
- ¼ cup low-fat cottage cheese small curds
- flaky salt to taste, savory toasts only
- fresh black pepper to taste, savory toasts only
For Prosciutto, Tomato, Basil & Balsamic Glaze Toast
- 1-2 slices prosciutto
- 1 tomato sliced
- 2-3 leaves fresh basil whole, sliced in chiffonade or chopped
- 1 drizzle balsamic glaze
For Smoked Salmon Toast
- 1-2 slices smoked salmon
- microgreens to taste
- 1 tomato sliced
- 2 lemon wedges squeezed on top of salmon
- finely sliced red onion to taste
- fresh dill
- capers optional
For Cucumber, Tuna and Corn Salad Toast (makes 2 Toasts)
- cucumber finely sliced
- 1 can tuna such as albacore, skipjack, chunk light or yellowfin; drained
- 2 tablespoons corn drained
- 1 tablespoon mayonnaise light or regular
- ½ teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon green onion finely sliced
For Strawberry, Honey, Chocolate Toast
- 2-4 strawberries sliced
- 1 drizzle honey
- 1 drizzle melted chocolate about 1 tablespoon melted chocolate chips
- fresh mint finely chopped
- 1 teaspoon hemp hearts optional
- 1 teaspoon granola optional
Toast bread slice to preferred doneness.
Spread about ¼ cup of low-fat cottage cheese. If savory toast, season with sprinkle of salt and black pepper.

- To chiffonade the basil, stack the basil leaves, then roll them together tightly, and thinly slice them with a sharp knife. Then simply separate the basil ribbons and add to the toast.
