How To Make Cottage Cheese Toast 4 Ways
- First, you'll get the base of the toast ready. I picked sourdough for my toasts, only because it's my favorite kind of bread, but you can use any bread that you would like. Toast your bread to your "toastiness" preference, but a little more than less will hold all the toppings better.
- Spread about ¼ cup of cottage cheese per toast, more or less depending on the size of the slice of bread. Season the cottage cheese with a little black pepper and salt for the savory toasts.
For Prosciutto, Tomato, Basil & Balsamic Glaze Toast

Gather all the ingredients.

Layer prosciutto, tomatoes, basil on top of cottage cheese and toast.

Then drizzle with balsamic glaze and a sprinkle of flaky salt. Enjoy!
For Smoked Salmon Toast

Gather all the ingredients.

Layer microgreens, tomatoes, smoked salmon, red onion on top of cottage cheese and toast.

- Can I use any kinda of bread to make cottage cheese toast? Yes absolutely, you can use any bread that you'd like, including gluten free options. Sourdough and artisanal breads are my personal favorite choice because they're sturdy and hold the toppings really well.
- What kind of cottage cheese should I use? This is totally up to you, if you prefer small curds or larger curds, you decide. I used small curds, low-fat (2%) cottage cheese from Good Culture. There isn't any dairy-free cottage cheese, but you can find lactose-free if you're sensitive to lactose.
- Get creative with your toasts, or tartines as we call them in French! You can really have fun with a variety of different toppings, bringing fun flavors and textures. From fresh fruits like peaches, raspberries, bananas, seeds, nuts, fresh herbs, spices, even eggs or bacon for a savory toasts. The possibilities are truly endless.
- The toasts are going to be best eaten right after assembling, if they sit for too long they could become a little soggy, which is why I like to get the bread nice and toasty before spreading the cottage cheese.

Toast Base
- 1 slice sourdough or bread of choice
- ¼ cup low-fat cottage cheese small curds
- flaky salt to taste, savory toasts only
- fresh black pepper to taste, savory toasts only
For Prosciutto, Tomato, Basil & Balsamic Glaze Toast
- 1-2 slices prosciutto
- 1 tomato sliced
- 2-3 leaves fresh basil whole, sliced in chiffonade or chopped
- 1 drizzle balsamic glaze
For Smoked Salmon Toast
- 1-2 slices smoked salmon
- microgreens to taste
- 1 tomato sliced
- 2 lemon wedges squeezed on top of salmon
- finely sliced red onion to taste
- fresh dill
- capers optional
For Cucumber, Tuna and Corn Salad Toast (makes 2 Toasts)
- cucumber finely sliced
- 1 can tuna such as albacore, skipjack, chunk light or yellowfin; drained
- 2 tablespoons corn drained
- 1 tablespoon mayonnaise light or regular
- ½ teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 tablespoon green onion finely sliced
For Strawberry, Honey, Chocolate Toast
- 2-4 strawberries sliced
- 1 drizzle honey
- 1 drizzle melted chocolate about 1 tablespoon melted chocolate chips
- fresh mint finely chopped
- 1 teaspoon hemp hearts optional
- 1 teaspoon granola optional
Instructions
- Toast bread slice to preferred doneness.
- Spread about ¼ cup of low-fat cottage cheese. If savory toast, season with sprinkle of salt and black pepper.
- Add your toppings, and enjoy right away.
*For Cucumber, Tuna and Corn Salad Toast
- Mix all ingredients in small bowl together, season with salt and pepper before adding to toast.
*For Strawberry, Honey, Chocolate Toast
- To melt chocolate chips, add them to microwave-safe bowl, and microwave for 30 seconds increments until fully melted.
Notes
- To chiffonade the basil, stack the basil leaves, then roll them together tightly, and thinly slice them with a sharp knife. Then simply separate the basil ribbons and add to the toast.
