Ingredients

  • 2 slices bread sourdough or of choice
  • 1 ripe avocado
  • 2 wedges lemon
  • 2 teaspoons chopped fresh chives
  • ½ teaspoon everything but the bagel seasoning
  • 1 tomato sliced
  • 8-10 slices cucumber
  • red onion finely sliced
  • salt
  • black pepper
  • 3-4 ounces smoked salmon
  • 1 handful microgreens

Instructions

  • With a fork, mash a ripe avocado in a bowl with a squeeze of lemon, some chopped chives and everything but the bagel seasoning.

  • Toast the slices of bread if you wish. Then gently spread the avocado onto each slice.

  • Layer sliced tomatoes, cucumber and red onion, sprinkle with a little salt and pepper.
