    Smoked Salmon Avocado Toast

    Elevate your breakfast or brunch with this easy and delicious smoked salmon avocado toast. Lightly toasted bread, seasoned smashed avocado, cucumber, tomatoes, red onion, topped with tasty smoked salmon, fresh lemon and microgreens. A simple and nutritious twist on bagel and lox.

    • It's so good and satisfying. Smoked salmon avocado toast is a fun twist on bagel and lox. It's packed with flavor and texture, crunch from the bread, cucumber and red onion and sweetness from tomatoes. I like to use smoked salmon on cottage cheese toast too.

    Key Ingredients And Variations

    • Toast: I love to use sourdough, but you can use any kind of bread you like.
    • Avocado: use a ripe medium to large avocado for two toasts, or two small avocados. For the best taste, make sure it's ripe, meaning if you squeeze it gently, it'll have a little give.
    • Smoked salmon: use 3-4 ounces, pre-sliced smoked salmon.
    • Everything but the bagel seasoning: it goes so well with smoked salmon. If you don't love, you can easily replace it with salt, pepper, garlic and onion powder or spices of choice.
    • Tomato, cucumber and red onion: this combination goes so well with smoked salmon avocado toast, it adds a nice crunch and fresh flavors. You could add capers too if you like them.
    • Lemon juice: adding a squeeze of fresh lemon juice helps the avocado stay green longer, and the acidity balances the smokiness of the salmon.
    • Fresh chives: I love to add fresh herbs to everthing, but you could skip them or use a little dill.
    • Microgreens: they're full of nutrients. They could be replaced with arugula.

    How to make this Smoked salmon avocado toast

    • Slice the veggies.

    Mash together the ripe avocado, lemon, chives and everything but the bagel seasoning.

    Toast the slices of bread if you wish. Then spread the avocado.

    Layer sliced tomatoes, cucumber and red onion, sprinkle with salt and pepper.

    • Add eggs to your toasts. Poached, fried, scrambled, however you enjoy them.
    • You can also add heat with hot sauce or red pepper flakes.
    • Place your ingredients in the fridge before preparing them, they would be even better cold.

    Can I make avocado toast in advance?

    Avocado toasts are best made right before eating. When prepared early, avocado might get brown but use a little lemon juice which will help keeping it nice and green. But you can slice the veggies ahead of time and keep them refrigerated until ready to use.

    Ingredients
      

    • 2 slices bread sourdough or of choice
    • 1 ripe avocado
    • 2 wedges lemon
    • 2 teaspoons chopped fresh chives
    • ½ teaspoon everything but the bagel seasoning
    • 1 tomato sliced
    • 8-10 slices cucumber
    • red onion finely sliced
    • salt
    • black pepper
    • 3-4 ounces smoked salmon
    • 1 handful microgreens

    Instructions
