    • Bell peppers and onion: these are traditional fajita veggies. I sliced them into strips, you can definitely chop them if you prefer.

    How to make Chicken Fajita Tacos

    • Chop the chicken into bite size pieces.
    • Cut the bell peppers and onion into strips.

    • Heat up oil in skillet, add chopped chicken, cook for a 3-4 on medium high heat, then sprinkle half taco seasoning, stir and continue cooking for another 3-5 minutes or until fully cooked. Remove chicken and place on plate.

    • In same skillet, add more oil, bell peppers and onion. Season with remaining taco seasoning. Stir and cook on medium high heat for about 5 minutes, or until tender, stirring often.
    • Heat up the tortillas either in a skillet or microwave, assemble tacos by adding chicken, and fajita veggies. Scoop some guacamole on top, serve and enjoy!

    Tips

    • Make sure to warm up the tortillas before assembling the tacos, so they're pliable. You can use a skillet to warm them or microwave by wrapping them in a damp paper towel for 30-60 seconds.
    • If you have a cast-iron skillet, I highly recommend using it, the fajitas will be even more flavorful.
    • Add more oil if needed. Salt and pepper as well.
    • Use medium to high heat, stir often. If you can get some charred edges, even better!

    It's up to your taste. I prefer flour tortilla, taco size for fajitas but corn tortillas and gluten free ones work too.

    Ingredients
      

    • 1 tablespoon cooking oil divided in 2
    • 1 pound chicken breast cut into ½-inch pieces
    • 1 tablespoon taco seasoning divided in 2, or more to taste
    • 1 red bell pepper cut into strips
    • 1 green bell pepper cut into strips
    • ½ white onion cut into strips
    • 8 flour tortilla fajita or taco size, or corn or of choice

    Toppings

    • guacamole recipe here
    • salsa
    • fresh cilantro
    • hot sauce

    Instructions
     

    • Heat up ½ tablespoon of oil in skillet, add the chopped chicken, cook for a 3-4 on medium high heat, then sprinkle half the taco seasoning, stir and continue cooking for another 3-5 minutes or until fully cooked. Remove the chicken and place on a plate.
